Cooking Time 10 minutes
Ingredients (in order)
● 1 cup fresh microgreens (washed)
● ½ cup grated coconut
● 1 green chilli
● ½ inch ginger
● 2 tbsp roasted chana dal (optional)
● Salt to taste
● Water as needed
For tempering:
● 1 tsp oil
● ½ tsp mustard seeds
● 5–6 curry leaves
Procedure
1. First wash the microgreens nicely and keep aside.
2. In a mixer, add coconut, green chilli, ginger, roasted chana dal, and salt.
3. Add a little water and grind into a smooth paste.
4. Now add the microgreens and grind again lightly (do not overgrind).
5. Transfer chutney to a bowl.
6. Heat oil in a small pan.
7. Add mustard seeds, let them splutter.
8. Add curry leaves and switch off the flame.
9. Pour this tempering over the chutney.
10. Mix and serve with dosa/idli.
